Homemade Pancakes

In keeping with my "no eating processed foods" yew years resolution, I ditched the Bisquick and made pancakes from scratch.

I don't think I will ever make Bisquick/Aunt Jemima pancakes ever again!

These pancakes were so fluffy, and they tasted fantastic! And you probably have all the ingredients right now in your kitchen!

Mix first four ingredients in a large bowl.

Separate egg yolks from whites. Save both.

In a small bowl, add milk and oil to the egg yolks and stir. Add to dry ingredients and stir until incorporated.

Beat the egg whites until fluffy and stiffish peaks form - 1 minute.

Fold beaten egg whites into the pancake batter gently until just incorporated.

Cook/griddle as you usually do! the batter will be super thick - I used a 1/3 cup measure to scoop it out and pour into the griddle, spreading it out slightly with a fingertip. I made them about 4inches wide, not too big. The batter is noticeably thicker than boxed mixes - it makes really fluffy pancakes, mine were about 1.5cm thick.

Don't be intimidated by beating and folding the whites - it is super quick. I had the whole batter made in about 3 minutes time.
